Zucchini Fries

Recipe makes 2 servings

Ingredients:

2 small zucchini (220g)

1 egg, whisked (50g)

½ cup almond flour (50g)

½ cup freshly grated parmesan cheese (45g)

½ teaspoon oregano

½ teaspoon pepper

½ teaspoon salt

Directions:

1. Preheat the oven to 400 degrees F. Line a baking tray with parchment paper.

2. Slice the zucchini in half lengthwise and cut them into equal-sized wedges.

3. In a shallow bowl, whisk the egg. In another bowl, combine the almond flour,

parmesan cheese, oregano, ground pepper, and salt.

4. Dip the zucchini wedges in egg wash first and then transfer them to the almond flour

cheese mixture and coat them well.

5. Place the coated zucchini on the prepared baking tray.

6. Bake them for 15 minutes; flip the zucchini fries halfway through and bake until

golden crisp.

7. Once done allow to cool and store in the fridge in an airtight container.
